Growing up in my family we loved our sweets (we still do). These little chocolate sandwiches were a staple on my dad's side of the family. I don't really know if there was an actual name for them because they were simply called GOBS! I made some for my son's class last week & they were gobbled up. They are very simple to make & to me they are so much more interesting than the standard cupcake.
Ingredients
Cookie
1/2 c butter, softened
1 c sugar
1 egg
1 tsp vanilla
1 c milk
2 c all purpose flour
1 1/2 tsp salt
1 1/2 tsp baking soda
1/2 c cocoa
Filling
1/2 c shortening
2 c powdered sugar
1 c marshmallow creme
1 tsp vanilla
3-4 tbsp milk
Directions
Cookie - Mix butter, sugar, egg, vanilla & milk. Then add flour, salt, baking soda & cocoa to mixture. Mix until smooth. Drop by teaspoonfuls on greased cookie sheet. Bake at 400 degrees for 4-6 minutes. Let cool.
Filling - Beat shortening & sugar. Add remaining ingredients until creamy smooth.
When cookies are cooled, spread filling on one side of cookie. Then add another cookie to make a sandwich.
