Ingredients
3/4 c unsalted butter
1 c sugar
4 eggs
1/2 c milk
1 tsp vanilla
1 1/2 c almond meal/ flour
1/2 c coconut Flour (this adds great flavor and fiber)
1/4 tsp salt
2 tsp baking powder
Directions
Cream together butter and sugar until smooth. Add in eggs, one at a time, and beat until fully blended. Add milk and vanilla, and mix until combined. In a separate bowl, combine flours, salt, and baking powder. Beat the dry ingredients into the wet ingredients and beat until creamy. Spread in a greased 9 x 13 cake pan and bake at 350 degrees for 30 minutes. Tastes great topped with whipped topping and fruit. We used strawberries!

I made this cake about 2 weeks ago.It came out great, I did not have the coconut flour so I substituted white flour. Looking forward to trying it with the coconut flour. When i made the cake I put it in a 9x13 pan. The batter was only about 1/2" thick. When it finished baking about 1". I am making the cake again today. This time in a 7 1/2 x 11 3/4 Pyrex Just took it out LOOKS GREAT
