Ranch Dressing

Ingredients
1 c buttermilk
1 c mayonnaise
1/2 tbsp onion powder
1/2 tbsp parsley flakes
3/4 tsp garlic powder
1/4 tsp celery salt
1/8 tsp pepper

Directions
Whisk together in large bowl. Cover and refrigerate.

Italian Sausage, Peppers and Onions

My cousin Angie made this for our family reunion. They were probably the best sausage, peppers & onions I have ever tasted. You can eat them plain or put them on a hoagie bun for a sandwich.

Ingredients
Italian sausage, medium hot
Italian sauce
Onions, sliced
Peppers, sliced

Directions
Place all ingredients in roasting pan. Cook on 350 degrees for a couple of hours.

Parmesan Garlic Crusted Chicken Toni

This is a very simple, yet delicious dish that I came up with tonight for dinner.

Ingredients
3-4 boneless, skinless chicken breasts
3/4 c Italian style seasoned bread crumbs
1 c grated Parmesan cheese
1 tsp pepper
1/2 c olive oil
2 tsp minced garlic
Rigatoni, cooked according to package directions
Spaghetti sauce (you can use your homemade sauce or a canned sauce)

Directions
Cut chicken into strips (not too thin). Preheat oven to 400 degrees. Place a large greased cookie sheet in the oven for about 5 minutes until hot. Put olive oil & garlic in a large dish. Heat in microwave for 30 seconds. Mix bread crumbs, Parmesan cheese & pepper in a large dish. Dip chicken in olive oil/garlic mixture. Then coat in the bread crumb/Parmesan cheese mixture. Place on hot cookie sheet. Continue the breading until all chicken has been coated. Bake for about 15 minutes until the bottom side of chicken is crispy. Turn chicken over & bake an additional 5 minutes or so until the other side gets crispy. Serve chicken with rigatoni & sauce. Sprinkle with Parmesan cheese.

Gyro Cucumber Sauce (Greek Tzatziki Yogurt Sauce)

Ingredients
8 oz plain low fat yogurt (I like Dannon's)
1/3 c cucumber, seeded & chopped
2 tbsp onion, finely chopped
1 clove garlic, crushed
1 tsp sugar

Directions
In a medium bowl, combine all ingredients & mix well.

Baked E-Z Ziti

Just like it says.... E - Z !!!


Ingredients
3-4 c Spaghetti sauce (I use my homemade sauce, but your favorite jar sauce will work just fine)
15 oz Ricotta cheese
16 oz Ziti, cooked & drained
4 c Shredded Mozzarella cheese, divided
Salt & pepper to taste
1/4 c Parmesan cheese

Directions
Mix sauce & ricotta cheese in a large bowl. Add ziti, 3 cups of the mozzarella cheese, salt & pepper. Toss to mix well. Pour into a lightly greased 9x13 baking dish. Sprinkle with remaining mozzarella & Parmesan cheeses. Bake at 350 degrees for 40 minutes or until heated through.

Pizza Pork Chops


Ok, before you turn your nose up or have serious doubts about this concoction my kids were saying mmmmmmmmmm from the first bite! Seriously, this will be made over & over. It gives a nice, new twist to pork chops. Pair it with Orzo with Parmesan & Basil for a big party in the mouth!

Ingredients
2 c sliced fresh mushrooms
2 tbsp butter
4 boneless pork loin chops (1/2 inch thick and 4 ounces each)
1/4 tsp salt
1/4 tsp pepper
2 tbsp olive oil
2 c marinara or spaghetti sauce
16 slices pepperoni
1 cup (4 ounces) shredded mozzarella cheese



Directions
In a large skillet, saute mushrooms in butter until tender (I am the only one in my family who likes mushrooms so I did not use them this time). Remove and keep warm. Sprinkle pork chops with salt and pepper. In the same skillet, brown chops in oil on both sides; drain.
Add marinara sauce; bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until a meat thermometer reads 160°, turning once. Layer pork with pepperoni, mushrooms and cheese. Remove from the heat. Cover and let stand for 2-3 minutes or until cheese is melted.

Pizza


One of my favorite things to make is homemade pizza! I love making it & my family loves eating it. I always make 1 round pizza with mozzarella cheese (or the Italian cheese blend) & pepperoni for my kids. I make 1 large rectangle pizza with mozzarella cheese (or the Italian cheese blend), Parmesan cheese, pepperoni, green bell peppers & vidalia onions for my husband. The last pizza is always my experimental pizza. I love to try things like olive oil, Italian seasonings, banana peppers, tomatoes, feta cheese, capers, olives, etc.

Ingredients
Pizza Dough Recipe (click to see on my blog)
Favorite pizza sauce (see below for ours)
Favorite toppings (shredded cheese, pepperoni, onions, green bell peppers, etc.)

Directions
Lower oven rack to the next to the lowest position. Pre-heat oven to 450 degrees. Heavily grease pans with shortening (to obtain a crisp crust you must grease heavily). Pull out enough dough for the pan you are using. Press dough into pan evenly. Allow dough to sit in pans for about 5 minutes before you start making the pizzas. Next you will add your sauce & toppings. Bake for 8-11 minutes. I always set my timer for 8 minutes & then add time after I check on it. Cook until it reaches your desired doneness.



I use a sharp knife to "cut" my dough out of the bowl.

We like this sauce best (notice it is not a pizza sauce).

Pita Pizza

For a super fast lunch, dinner or snack try these delicious pita pizzas. The kids love to make their own.


Ingredients

Pita bread (not sliced)
Pizza Sauce
Shredded Mozzarella
Pepperoni
Other favorite pizza toppings


Directions
Preheat oven to 420 degrees
Place pita bread on baking sheet
Layer sauce, cheese & toppings on pita
Bake 8 minutes or until cheese is melted & pita is crispy
